Is there a way to call the ExcelPackage.Save function without disposing the package or save the workbook in a different way?

I would like to save the workbook, sleep for a minute and add more rows to the end of a spreadsheet, but due to memory constraints I would like to keep the current rows/worksheet and just add at the end.

The users would always use the Windows FS Copy function and work on a copy to check the spreadsheet.

No, not at the moment. Save will update the xml from the lists saved in memory. And with the current design it will not work to "resave" the package, so I dispose it at the end.

You can of course use the stream to load it into new package, but I assume that's not what you want to do.
